UW Extension Releases New High Altitude Cookbook | News

The University of Wyoming Extension recently released a new “High-Altitude Baking” cookbook, a collection of original height-adjusted, user-tested recipes for everything from cakes and cookies to scones, muffins, breads and pizzas. did.
Available in print and online, this publication features over 100 delicious altitude adjustment recipes, all tested at both 3,500 and 7,200 feet (and other elevations in between).
This cookbook was co-authored by Vicki Hayman, Food Safety and Nutrition Educator at UW Extension, and Tanya Engel, Graphic Designer and Digital Marketing Specialist at UW Extension.
Hayman and Engel say the cookbook is available to bakers of all skill levels.
The first high altitude cookbooks published by UW Extension debuted in the 1960s. Heyman and Engel chose to write a new book on How to Make Baked Goods rather than revise the original updated version.
“The goal was to go beyond just searching ‘highland recipes’ on Google,” says Engel. “These are tuned and tested for what we believe to be the best version.”
In addition to researching, testing, and writing recipes, she also designed and photographed cookbooks.
Engel says he’s always enjoyed baking, but it was a major source of frustration when he first moved to Laramie. Even with her tried-and-true chocolate chip her cookie recipe, she failed. As she discovered, baking bread at high altitude often requires adjustments in time, temperature, or ingredients.
“A recipe may sound great and get rave reviews, but it can go awry at higher elevations,” says Heyman.
Additional adjustments may be required as altitude increases, she says. Some recipes that worked brilliantly at 3,500 feet were a disaster at 7,200.
Recipes were tested and tasted in kitchens across Wyoming with the help of over 40 volunteers.
“A big thank you to all our volunteer testers,” Heyman says. “We couldn’t have done it without them!”
