Before everyone can enjoy funnel cakes, corn dogs and fries at the Tulsa State Fair later this week, food vendors must undergo a health inspection. There are over 200 food booths at this year’s Tulsa State Fair.

After traveling from across the country, vendors are cleaning up before inspections begin on Tuesday.

According to Osage Skynews 6, the only thing missing in front of the Tulsa State Fair are rides and fried thrill seekers. However, it is clear that there is still much work to be done on the ground.

“Come in, over here! Here’s a lemon squeezer for a freshly squeezed lemonade shake-up. Here’s a cheese machine for hot, tangy nachos. Here’s a corn to cook corn dogs.” There is a dog cooker, said Billy Fickling of McInnies Food Service.

Fickling says at the Tulsa State Fair each year that mustard is the most popular seasoning for corn dogs. “Everyone in Oklahoma loves mustard,” he said.

AMY: “Where else are you going?”

Billy: “Well, like Wisconsin, it’s ketchup in the north. Mustard in the south. Beyond Louisiana and Houston, it must be mayonnaise.”

But regardless of seasoning, things should be clean. Fickling came from Illinois where he traveled 800 miles.

“When you go up and down the road, you get dust and everything, and like I say, we try to keep it as clean as possible,” he said.

“We just finished the Kansas State Fair, so we didn’t have to travel very far this time,” said Matt Hall of “Chicken City.”

Chicken City has a new fair food coming this year. “OMG Chicken Sandwich”.

“It’s chicken coated in frosted flakes, topped with a glazed donut and topped with bacon and maple syrup,” says Hall.

But before serving that sweet and savory sandwich, Hall works to clean up the trailer.

“Health checks start tomorrow and we will make sure everything is in order for opening on Wednesday and Thursday, so we need to clean the inside as much as the outside,” he said.

The Tulsa Health Department said testing will continue for several days. Inspectors spend approximately 500 hours during the 11 Days of Awesome.
